Vegan and Gluten Free Tahini chocolate cookies🍪

These vegan and gluten free double chocolate tahini cookies are super easy to make and taste incredible.

Ive had a big jar of  Tahini in my kitchen for a while but not had many occasions to use it, however the other day I was inspired to use it in some of my recipes, especially sweets.

I always had the idea to try it in baking but never had enough of time or inspiration to use it.

The most difficult part was to decide which flavours I want my cookies to be? Would it be chocolate,pistachio or sesame seeds with apricot chunks ?

As every girl I love chocolate as it’s always the best way to treat myself. So I decided to make double chocolate with hazelnuts.Why not?

It tasted almost like Nutella, soft inside, very chocolaty and with extra crunch from the roasted nuts on top.

You will only need few ingredients to make those pretty and gluten free cookies .

Also you can keep it in the container for week or 10 days so its perfect little snack to go, great for the packed lunch or little afternoon treat ♥️

So there is the recipe ✨

Ingredients:

• 1/2 cup organic tahini🥄 @meridianfoods

• 1/4 cup organic coconut oil🥥 @vitacocoeu

• 3/4 cup unrefined coconut sugar or maple syrup @indigo_herbs

• 2 tsp vanilla extract

• 3/4 cup fine blanched almond flour

  1scoop chocolate protein @kin_nutrition

• 1/2 cup cocoa powder or raw cacao @adunaworld

• 1/2 tsp baking soda

• 1/8 tsp fine grain sea salt

• Dark chocolate @loving_earth cut in small chunks

• 15 hazelnuts chopped @hollandandbarrett 

1 Preheat your oven to 180 degrees and line a large cookie sheet with parchment paper.

2 Beat together the tahini and coconut oil  ( hand mixer is perfect  for this)Then, beat in the coconut sugar ( syrup) and vanilla.

3 Mix the dry ingredients together in a separate bowl (except for chocolate chips and nuts) then add the dry mixture to the wet ingredients and mix well until a sticky dough forms.

4 Stir in the chocolate chips and mix with a wooden spoon, then chill the dough for about 10 minutes. Use a spoon or cookie scoop/ice cream scoop  and make  16, flatten each one into a “cookie shape” and bake in the preheated oven for 10-12 minutes, until just set.

5Allow the cookies to cool on the baking sheet for 3-5 minutes, then transfer to wire racks to fully cool. Enjoy!🍪
