I always come across protein pancakes and waffles on my Instagram feed over the weekends but I’m not a big fan of it personally simple because I love cinammon french toast ♥️ This Sunday I decided to make my own but healthy ofcourse.
There are few places in Manchester where you can find super fluffy and delicious french toast and it’s not too hard to make it yourself ether if you have the brioche ,some milk,eggs and cinnamon.
But what if you are Vegan and Gluten free? Do you know many cafes where you can get something like this!? Im not sure.. and as a big foodie who loves to check the menu from the top to bottom I never saw anything like in any menu so far.
Okey, so I got this idea to make Gluten free and Vegan french toast for my breakfast/brunch this weekend.
If you not shopping in a special groceries with the whole range of Vegan products ( like me) but only have an access to supermarket you more likely won’t find the GF brioche buns or maybe I wasn’t lucky enough just to get one?
Anyways let’s try to use classic GF Bread which is avaliable in all grocery store and see if it could replace the brioche.
In my local Cooperative which I visit every day I bought this GF loaf.
So far it’s the best gluten free bread I tried.

Another moment which is also important in this recipe is the egg. As we all know in classic recipe you have to use egg, milk or cream and other additions like vanilla, cinammon, nutmeg , maple syrup or brown sugar.
As I tried to make this recipe healthy as possible and Vegan with Gluten free bread it was an essential point for me to swap the egg to chia egg.
Honestly I wasn’t sure if all would work well in this recipe .The worst scenario could be a burned soggy bread and ruined expectations 😀 But luckily this recipe worked well and we enjoyed a lovely breakfast this Sunday morning.
For 2 portions you will need:
4 slices of GF bread
1 cup of milk ( Almond)
1 tbsp chia ( in Nutribullet blend 1 table spoon of chia).
1/2tbsp of cinammon
1/4 tbsp nutmeg
1/2 tbsp vanilla
1/4 tbsp Himalayan salt.
1 tbsp of honey or maple syrup
Combine all the ingredients (apart from the bread) in a deep bowl, set aside for 10 minutes to activate chia seeds.
Preheat the non stick pan ( I used my Circulon) gas mark 5, use a bit of coconut oil to get golden colour , dip the bead one side, then another in the milk mixture and place carefully on the pan.
Once it’s golden,flip over to get the same look on the other side.
Serve with your favourite toppings, natural yoghurt, banana, blueberries, raspberries and maple syrup or honey.
