Easter Holidays officially here and maybe weather isn’t perfect just yet but it’s still a perfect time to celebrate Spring with your family.
This Good Friday I decided to spend more time at home, enjoy cooking and photography as more day avaliable now since we changed time.
In my baking I try to use only finest ingredients and replace what is possible to the healthy version such as butter to coconut oil, sugar to Algave or honey, milk to almond milk etc.
So today I was craving for some chocolates, to be honest I was passing by one coffee shop few days ago and the had those beautiful fudgy chocolatty brownies on the window.. I could not stop thinking about them since and today I decided to recreate my own.
Luckily I always or most of the time have all the ingredients at home.
I’m a big foodie and food shopping lover so as soon something is finished or nearly finished I try to replace is so when I’m ready to cook I don’t have to go to the shop .
Today with my little Ellie we made chocolate brownies. The aim was to recreate the recipe for the healthy one but still delicious and tasty just as classic brownies.
Well I was the one who tried it first, still warm and gooey just out the oven.
I must admit that I could not stop after the one slice and had another one as they turned out so yummy.
I bake quite often and that’s why I know the batter consultancy without weighting all the ingredients… like in this recipe I mixed all the ingredients which I knew will work together in that proportions as more often I always try to make the recipe not follow excising one.
This recipe is based on small size tray if you want to make a bigger portion just double the ingredients.
For my hazelnut chocolate brownies I have used:
Almond flour 250gr
Baking powder 1tea spoon
Vanilla 1 teaspoon
Coconut oil 1/3 cup melted
Cocoa butter 1/2 cup
Cocoa powder 200gr
Salt 1/2 tea spoon
Hazelnut nut butter 3 tbsp
Crushed hazelnuts 30 gr
🍫Melt the cocoa butter on the hot basin, add half of the cocoa powder, stir well till runny and combined.
🍫Beat 2 eggs for 3 minutes till white and fluffy, add vanilla, honey.
🍫Mix almond flour, salt, baking powder,and the tea of cocoa powder together.
🍫Mix all the ingredients together, apart from nut butter and nuts.
Lay the baking tray with parchment paper ,place half of the chocolate batter , then make a layer of the nut butter ( I used hazelnuts but almond or peanut also works well)
Add the rest with the batter to cover the nut butter and top with some hazelnuts on top.
Preheat oven to 180C
Bake for 20-25 min till dry outside but soft inside. ( use the toothpick to check the baking progress)
Let it cool for few minutes and serve warm with favourite vanilla ice cream or in its own 🍴
